The santoku is the top dog in Japanese cuisine and stands for "three virtues", i.e. the three uses - meat, fish and vegetables. It has become our favourite knife not only because of its versatility.
The blade is forged from 67 layers of corrosion-resistant Damascus steel (Japanese VG-10 steel core) and is given a hardness of 60±1 HRC.
Vacuum hardening achieves maximum hardness and strength with low distortion. Since no oxidation takes place in a vacuum, the workpieces remain metallically bright and clean. The surface of the blade is finely polished and very sharply ground.
The handle material consists of high-quality G10, a very light and robust glass fibre composite laminate. This impresses with perfect properties in terms of insensitivity, grip and slip resistance. Because it is easy to wash after use, it is very easy to clean.
